Claire Fanning

In her career Claire has worked for some of the country’s finest restaurants and industry figures, including Tom Kerridge’s two Michelin Starred Hand and Flowers and Heston Blumenthal’s Hind’s Head in Bray.
This experience, coupled with her love of fine food and wine and a passion for top quality service makes her an inspirational figurehead for the team at Paris House.
Thomas Seprey
Restaurant Manager
Thomas joined the team in 2018 and has brought with him lots of fun & laughter. He has gradually worked his way up through the ranks and we're delighted that he has now been made Restaurant Manager.
Thomas hails from Rouen, France and has worked in 4* & 5* French hotels until we enticed him to come and join us. He loves spending time with friends and family, laughing and talking.
Howie Sayers
Sommelier
Howie has been involved in wine for over 20 years, from buying to food matching, editorial to wine flights, with a share in a small vineyard in Italy. His knowledge and compelling stories of wine-growing regions make him a very welcome and much loved member of the team!
Dan Treadwell
Head Chef
Dan joined us in November 2016. As Phil's right-hand-man he oversees all the sections, assists with menu design and staff training and runs the pass.
He is passionate about Modernist cuisine and loves to read about it, as well as practise it here at Paris House.
Jack Matthews
Junior Sous
Jack joined us in 2021 just in time for reopening after the Covid lockdown.
Fortunately his cooking is infinitely better than his music taste, but his DJ skills keep the kitchen jumping.
Jorge Reis
Chef de Partie
Jorge joined us in 2022, bringing his international experience to the team. Cordon Bleu trained, Jorge has worked in top end restaurants from Berlin to Shanghai and of course his native Lisbon.
He loves to travel and spend time with his young family.
Amy White
Assistant Restaurant Manager
Always a big food lover, Amy originally trained as a Chef - a path that led her into her childhood dream of joining the Royal Navy. After being medically discharged she came back into hospitality and has been Clubhouse Manager at the John O'Gaunt Golf Club for the past 2 years.
Amy loves playing bowls, golf, and fishing with her Dad.

Brandon (lovingly known as Cecil) joined us this year, a fun new addition to the team.

Jeremy joined us this year, a fun new addition to the team. He is a wizard on the bar and has developed some of the fabulous recipes on our cocktail menu. He loves to look after a party (and often becomes part of it!)
Jo Freeman
Head of Brand & Reservations
Jo spent 10 years working in creative agencies before spending another 12 in retail working in various roles from Brand and Commercial Marketing to Store Branding & Design. She took the leap away from big corporate business 6 years ago and hasn’t looked back.

Tom started working with us in 2019 as a Commis chef. He left us in 2022 to spread his wings and spent a year travelling and cheffing his way round Australia. And now he's back, with more experience and a bit (!) more maturity, as a Demi Chef de Partie.
